Grape Variety: Negroamaro
Production Area: Brindisi Province. Bush vine 50 years old.
Vinification: Hand harvest of overripe grapes in the second half of September.
Destemming and crushing of the grapes, thermo-controlled alcoholic fermantation with skin contact. Pressing and malolactic fermentation. Ageing for about 6 months.
Best served with: Ideal with savoury first courses, grilled meat and hard cheese. Also a meditation wine.
Serving temperature: 16-18°C
Alcohol level: 14,50%
