Production Area: Salento. Suoli scistosi di tipo calcareo poco ricchi e profondi.
Vinification: Preferably hand-harvested, followed by destemming and crushing, with maceration at controlled temperature. Racking and subsequent malolactic fermentation. Aged for approximately 12 months.
Best served with: Grilled red meats, braised dishes and flavorful sauces, cured meats, aged cheeses — a wine for meditation.
Serving temperature: 18°C
Alcohol level: 16%
